Abstract

Application of different doses of nutrients such as fertilizers, fly ash (FA) and farm yard manure (FYM) to the soil, which changed the grain yield, had little effect on protein content of the rice grain except for the marginal increase of it when FYM is added. Similarly the soluble fractions of rice protein such as albumin, globulin, prolamin and glutelin, which determine its nutritional quality, were found to be affected only to some extent by the FYM treatments, especially the glutelin fraction. Therefore, though the application of various nutrients had been known to change the yield of rice grain significantly, its nutritional value, as far as the quantity and quality of protein were concerned, was not so.
